Sheer Khurma is the most significant dessert of Muslims.It is usually prepared & served on Eid-ul-Fitr. Sheer Khurma is a Persian word,sheer means milk & khurma means dates.In this recipe milk is boiled on medium flame for half or one hour.While vermicelli & dry fruits are fried in a ghee.Further it is cooked by mixing vermicelli & dry fruits on low flame.The most important ingredient of this dish is dry dates,which give it most unique colour & flavour.

The basic ingredients of Sheer Khurma are milk,vermicile,sugar,ghee,dry fruits,Khoya,cardamom,kewra water,which increase its's taste & aroma more.

Ingredients;
- Milk 1 litr
- sugar 1 cup
- desi ghee 1 tbsp
- cardamom powder 1 tsp
- dry fruits(chopped raisins,almond,coconut,dry dates)
- Vermicelli 1/2 cup
- khoya 1/2 cup
- kewra water 2-3 drops
How to prepare;
- Boil 1 litr whole milk
- Stire the milk,after it come to boil
- add cardamom powder,it enhance aroma
- add 1 cup sugar,stir to mix it well.
- let the milk simmer on low flame.
- when milk turned to thick,add roasted dry fruits.
- then add roasted vermicelli also.
- keep the milk stirring until it thick to desired consistency.
- when it become thick,add khoya & few drops kewra water.
- Now Sheer Khurma is ready.
- Now garnish,serve hot or cold sheer khurma.
roat the dry fruits;
- Hear 1 tbsp desi ghee in a frying pan.
- roast the sliced dry date for a minute.
- now add raisins,chopped almond,coconut
- roast all the dry fruits for 1-2 minutes.
- until they turn light golden brown & fragrant.
roat the vermicelli;
- Now roast Vermicelli for 1-2 minute.
- this will burn quickly so keep stiring.
- when Vermicelli turned light golden brown,set them aside.
