Anday Aaloo ka Salan or Egg Curry is one of those dishes that tastes like home. It is very easy, quick and economical dish.The recipe of this dish is very easy . The boiled ,fry egg and potatoes with simple spices are used in this recipe.Its flavour is amazing.Actually this an amazing recipe to cook egg with potatoes.It is presented with chapati or naan in winter season. It is delicious dish in winter season.

Ingredients

  • Eggs -7(boiled)
  • Potatoes -4 (half cut)
  • Onion -2(medium size)
  • Tomatoes -3
  • Garlic -10 cloves
  • Coriander as per use
  • Cooking oil 1 cup
  • Red chilli powder 1 tbsp
  • turmeric powder 1 tsp
  • Salt 1 tbsp
  • coriander powder 1 tbsp
  • Green cardamom -3
  • Garam masala powder -1/2 tsp

How to make it

  1. Hard boil the eggs for 8-10 minutes.
  2. Drain water,let them cool and remove the shell.
  3. Heat oil in a pan for deep frying.
  4. Place eggs and fry on medium heat until they turn golden brown.
  5. Remove from oil and keep aside.
  6. Blend onion, tomatoes, and garlic and ready their paste.
  7. Heat oil in a saucepan, then put cardamom further in the oil and slightly fry them.
  8. After frying the cardamom slightly,add blended onion,garlic tomatoes paste. and fry them constantly.
  9. (add little water if needed).
  10. Add salt, chilli powder, turmeric, coriander powder and water.
  11. Fry the masala properly until it give the specific frying masala smell and it colour change beautifully brown.
  12. Then add the potatoes,and fry the potatoes with spices.
  13. when oil is appearing, then add -2 glasses of water and let the potatoes cook for 10-15 minutes.
  14. when potatoes got tender,then add eggs,cook them 5 minutes more.
  15. when egg & potatoes curry is ready, add garam masla, coriander leaves to the egg & potatoes curry, stir gently and transfer them to the serving dish.
  16. Serve hot with chapati or paratha
