Chicken Mutanjan//Murgh Mutanjan Recipe;
Murgh mutanjan is a royal type of dish which is originate from Mughal. It is also called Mughalai or royal dish. Mughal cuisine is actually the combination of subcontinent and central Asian cuisine. Mughlai dishes are famous and renowned due to extremely use of spices like saffron, cardamom, black paper,dry fruits, nuts as well as cream milk & butter in preparation of curry bases. Murgh Mutanjan is a sweet boiled colourful & flavourful rice dish,which cook with chicken stock.Different types of nuts/dry fruits like almond,cashew nuts,raisin,coconut,tutti frutti and sweets cham cham, gulab jaman make it delicious, nutritious and appealing dish.In this recipe, First of all chicken stock is made with simple ingredients and sella rice are boiled.Then boiled rice are cooked with cooked with chicken stock and simmer with dry nuts & food colour.

Ingredients;
- Rice (sella) 500 gm
- Rice should soaked overnight & at morning it should be 3/4 boiled.
- Chicken boiled 500 gm
- Chicken stock 1 cup
- Ashrafi murabba (tutti fruitti) as required
- Sugar 400 gm
- Cham cham as required
- Food colours (Green,red,orange)
- Ghee 1/2 cup
- Kewara water
- Clove 5
- Green Cardamom 5
- dry fruits/Nuts (almond,coconut,raisin,cashew nuts) as required

How to prepare Murgh Mutanjan;
- First of all heat the Ghee in the pan.
- Now add green cardamom & cloves and fry a bit.
- Now add boiled chicken & fry for 4-5 minutes.
- When chicken gets light golden,add sugar & chicken stock together.
- Mix the chicken stock well by stirring the spoon
- When sugar dissolved with chicken stock well,add boiled rice in it.
- Mix the rice slightly with sugar syrup & chicken stock on high flame.
- When syrup get dried,cover & cook rice for 5 minutes.
- When water is dried in the rice,spread food colour & kewra water in it.
- Then spread ashrafi Murabba & all dry nuts on rice
- Put the cham cham (sweet) in the last on the rice.
- Cover the rice & simmer for 15 minutes with all these ingredients.
- After 15 minutes Chicken Mutanjan is ready, now serve & enjoy it.
Roast the Dry fruits;
In a separate frying pan,add 2 tbsp oil & roasted the dry fruits for 2 minutes(almond,coconut,cashew nut,raisin)until they get light golden.
