Biryani is basically developed in royal kitchen of Mughal empire.In Delhi,rampur,Lucknow,Hyderabad,Tamil Nadu. different varieties of biryani is developed. Biryani is also very popular in most of region of Pakistan,because Pakistan is greater exporter and consumer of basmati rice. Biryani has more stronger spice as compared to Pulao.The biryani is cooked by meat,Potatoes,and boiled rice.Both pakki basmati & kachi basmati can be used for preparation of biryani. Biryani is prepared by chicken,beef or mutton.Now a days vegetable biryani is also very famous.First the chicken,beef or mutton curry is prepared with different grinded & whole spices.It's curry taste is stronger due to greater amount of spices.The meat curry is layered with boiled basmati. Its let on medium to low flame for steam.

INGREDIENTS;
- Chicken 1 kg
- Rice 1 kg
- Biryani masal 3 tbsp
- Red chilli powder 2 tbsp
- turmeric powder 1 tsp
- Coriander powder 1 tbsp
- Salt according to taste
- Dried plum 5-6
- Onion (medium size) 4
- Tomato puree 1 cup(half puree for chicken
- curry & half for suace/chutni)
- Cooking oil 1 cup
- Yogurt 1 cup
- Ginger garlic pate 2 tbsp
- Fried brown Onion of 1 (medium size onion)
Chutnies/sauces;
- Green sauce/chutni(prepare by blended green coriander,mint,green chilli&green food colour)
- Red sauce/chutni(prepare by mixing tomatoes puree with red food colour)
- Yellow sauce/Chutni(prepare by mixing brown onion with yogurt&yellow food colour)
How cook biryani;
- First boil the rice with (whole garam masala,lemon juice,chopped ginger&salt)
- Now prepare chicken curry,fry onion in hot cooking oil in pan.
- when onion turned light golden brown,add ginger garlic paste
- Fry ginger& garlic paste a bit,then add tomatoes puree
- fry tomatoes puree for few minutes and add chiken
- Fry chicken for a bit.
- Now add all dried spices mix&fry with chicken.
- put yogurt & mix well with all ingrediets.
- add half glass water to leave the chicken cook on medium flame.
- when chicken cook well,fry it further for few minutes.
- Now chicken curry is ready.
How prepare biryani for steam;
- divide boiled rice in three portion
- make 1st layer of boiled rice in pan
- then put the layer of half of chicken curry on the rice.
- sprinkle fried brown onion
- repeat the process
- the 2nd layer of boiled rice
- put next layer of rest of chicken curry
- sprinkle brown onion & add 3rd layer of boiled rice
- making all layers,put green,red & yellow chutnies & sauces on it.
- for finishing touch,add rest of brown onion & 2 tbsp cooking oil.
