INGREDIENTS:
- Rice 500 gm
- Chana dal (boiled) 1 cup
- Mutton mince meat (boiled) 1 cup
- Mutton stock
- Onion (medium size sliced) 1
- Ginger garlic paste 1 & 1/2 tbsp
- Tomato (sliced) 1
- Green chillies paste 1 & 1/2 tbsp
- Black paper (cushed) 1 tsp
- Salt (according to taste)
- Cooking oil 3/4 cup
- Whole spice
- Cinnamon sticks 3
- Black cardamom 2
- Cumin seeds 1 tbsp
- Bay leaves 2-3
- Cloves 6-7
How to cook or prepare Shahjahani Khichdi:
- Heat 3/4 cup cooking oil in the pan.
- Add sliced onion.
- Fry the onion,until it turn light golden.
- Add ginger garlic paste when onion is light brown.
- Add whole spices such as Cinnamon sticks 3, Black cardamom 2 , Cumin seeds 1 tbsp , Bay leaves 2-3 , Cloves 6-7 after frying the ginger garlic paste a little bit.
- After frying whole spices & ginger garlic paste,add sliced tomatoes for frying.
- When sliced tomatoes turns soft,add green chillies paste.
- Add salt & crushed black paper along with green chillies paste.
- Stir it to mix all the ingredients.
- Add mutton mince meat.
- Cook the mince meat a little bit with all these ingredients.
- Now add boiled split chickpeas.
- Add mutton stock.
- Add more water if stock is less than rice.
- Add rice when water is boiled on high flame.
- Cook the rice uncovered on high flame until water get dries.
- When water get dries,cover & cook the rice on low flame.
- After 15-20 minutes,the special recipe of Shahjahani Khichdi is read.
- Now dish it out & serve with kheera raita or chutni or pickles.
