Nihari is a royal dish which taken as breakfast by Mughal Nawab.It's means the first meal of the day.Nihari is prepared by different type of meat in India and Pakistan such as beef,mutton,goat,lamb and chicken.The most famous all these types is beef Nihari.The Nihari is a stew type of dish.The beef is cooked on slow heat for many hours with highly variable spices until it get so tender.The all juices of beef dissolve with the gravy of nihari .And the mixture of nihari spices and beef stew along with tender beef give unique flavour & Aroma.Although the Nihari is time consuming dish but it's recipe is so easy & simple.Boiled the beef in a pan.when it cook somehow tender,separate the stew & beef .Already boiled beef make this Nihari recipe so easy.First heat the oil in the pan,then golden brown the onion and fry the beef  in the same pan.Now mix all grinded Nihari spices and yogurt in it.Mix flour in a bowl with water and pour this paste in the Nihari. Now let the Nihari cooked more until the beef become more dedicated and all its flavour mix with spices and beef stock well.Add tarka of fried brown onion in the Nihari & garnish it with green coriander,green chilli and ginger.Served with Naan or chapati.

INGREDIENTS
1 Kg of Beef
1 cup yogurt
1 teaspoon turmeric powder
2 tb spoon special garam masala powder
2 tb spoon coriander powder
1 teaspoon dry ginger powder
2 tb spoon red chilli powder
1 tea spoon black salt
3 tablespoon flour
2 tb spoon ginger garlic paste
1 cup cooking oil
1 onion
3 bay leaf
Salt according to your taste


GARAM MASALA INGREDIENTS:
  1. 5 small cardamom pods
  2. 1 tb spoon fennel seeds
  3. 3 whole black cardamom pods
  4. 1 tb spoon cumin seeds
  5. ½ teaspoon whole black pepper
  6. 6-7 cloves
  7. ¼ teaspoon nutmeg & mace
  8. 3 Aniseed flower

INGREDIENTS FOR GARNISHING:
1 small onion
Fresh coriander 1 to 2 fresh, peeled and sliced ginger 6 to 7 finely sliced green chillies

INSTRUCTION FOR PREPERATION:

 
  1. First of all, boil beef. when beef got tenderise, strain it's stock.
  2. Grind all garam masala spices together.
  3. Then put pot on stove, heat it, then pour cooking oil in it and fry chopped onion with bay leaf inside it. when onion got golden brown, then add ginger , garlic paste and fry for few minutes.
  4. After pour beef in it and fry it. then add spices and yogurt and fry more.
  5. also put garam masala powder and black salt , dry ginger powder also.
  6. Mix flour with water in small bowl and make it's paste. Then pour this paste in beef , fry for few minutes. This paste will thicken broth of Nihari. And then add beef stock in it.
  7. Let it cook for 15 minutes on low
  8. flame.
  9. After 15 minutes fry a small medium chopped onion in oil , when it's turn brown then pour this oil with fried onion on Nihari for tarka.
  10. Now Nihari is ready , garnish with green coriander, green chillies and ginger.
  11. Serve with Naan or chapatti.
