Kerry means raw mangoes.Raw mangoes/kerry are sourly or green in colour.Raw mangoes are not as juicy as ripe mangoes.It is is full of  Vitamin C.Different recipes are also prepared by raw mangoes or kerry in India & Pakistan such as raw mangoes sauces/chutnies,pickle,salads,raw mangoes rice,lentil and curry dishes.A powder called Amchoor is also prepared by raw mangoes,it is used in fruits and different charts and gravy type dishes. Pakistan is the 3rd largest exporter of mangoes.The sweetest and yellow skinned soft mangoes are available in abundant in Pakistan during summer season.The soil and climate of Pakistan enable to produce the good quality mangoes all over the world.Due to its cooling properties the raw mangoes is also popular to prepare the juice or sharbat. The recipe of raw mangoes is very quick,easy and economical.First the raw mangoes with skinned are boiled in a water.Then they are blended after removing the skin.The smooth blended paste of raw mangoes is cooked on medium flame with sugar,lemon juice & salt.Then this paste is cooked & turned to thick then it is used to prepared chilled refreshing drinks of raw mangoes with mint soda water.Which gives refreshing and soothing effect during hot summer season.

INGREDIENTS;

RAW MANGOES 1 KG
SUGAR 700 gm
LEMON JUICE OF 4 lemon

INGREDIENTS;

  1. boil the raw mangoes on stainless steel pan on medium flame.
  2. all mangoes should be boiled until all these get soft.
  3. remove these mangoes from the stove.
  4. let them to cool down.
  5. now take out pulp,when they get cool down.
  6. now blend the boiled mangoes pulp smoothly.
  7. when it blended well,then pour the paste in a pot.
  8. now add 700 gm sugar & 1 cup water.
  9. now stir it continuously on medium flame.
  10. now boiled this paste well until it get thick.
  11. then add a little bit green food colour in it.
  12. after food colour,add lemon juice in it.
  13. add 1/2 tsp black salt in it.
  14. remove from stove,when all ingredients mix well 
  15. and mangoes paste get thick properly.

To make juice;

  • when boiled mangoes pate get cool
  • make juice of it.
  • add ice cubes in a glass.
  • 4-5 tbsp mangoes paste.
  • add 1 cup of water in a glass.
  • mix all these well.
  • now add soda water/sprite in the last.
